Adds three new trending category groups to the repository: AI Governance & Safety, Platform Engineering & IDP, and LLMOps / Evals / Observability. This PR includes 12 new subagents, category README files, and main README updates to expand coverage in fast-growing areas of modern AI and platform engineering workflows.
